Sweet Potato Soufflé
Soufflé:
3 C. cooked mashed sweet potatoes
1 cup sugar
3 eggs
1/2 cup butter
1/2 teaspoon salt
1 tablespoon vanilla
Topping:
1/2 cup butter
1 cup brown sugar
1/2 cup self rising flour
1 cup chopped pecans

Mix soufflé ingredients together and place in a greased 2 quart baking dish.

For Topping:
Mix all together and sprinkle on top of potatoes. Bake for 30 minutes at 350 degrees F.
