Greek Salad/Horiatiki
1 Tbsp. + 1 tsp. red wine vinegar
1 Tbsp. olive oil
1 1/2 tsp. minced thyme
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
4 cups sliced romaine lettuce
1/2 green bell pepper, seeded, diced
1/2 red bell pepper, seeded, diced
1 tomato, diced
1/4 cup minced dill
10 small kalamata olives, pitted, chopped
4 scallions, sliced
1 cup crumbled feta cheese (fat free)

This is typical of the salad available all over Greece

In a salad bowl, combine the vinegar, oil, thyme, salt and pepper. Add the lettuce, bell pepper, tomato, dill, olives and scallions; toss to coat. Add the cheese; toss gently. Serve at once.

Makes 4 servings
