Ginger Roasted Carrots
8 carrots, halved lengthwise
2 Tbsp. orange juice
1 Tbsp. minced peeled gingerroot
2 tsp. olive oil
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1/2 tsp. grated orange zest

Preheat the oven to 350° F. In a 13x9" baking dish, combine the carrots, orange juice, ginger, oil, salt and pepper. Bake, covered with foil, until tender, 25-30 minutes.
Sprinkle with the orange zest.
