Fusilli with Swiss Chard
1 1/2 cups fusilli
2 tsp. olive oil
1 onion, chopped
1 bunch Swiss chard, cleaned, chopped
3 garlic cloves, minced
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1 tomato, diced
1 Tbsp. + 1 tsp. grated Parmesan cheese

If you're not familiar with Swiss chard, this vegetable is actually a type of beet that's grown for its broad, deep green leaf rather than for its root. Its flavor is milder than other cooking greens it's similar to spinach.

Cook the fusilli according to package directions. Drain, reserving 3/4 cup cooking liquid, and keep warm.

In a large nonstick skillet, heat the oil. Add the onion; cook, stirring as needed, until softened, about 5 minutes. Add the chard, garlic, salt and pepper; cook, stirring as needed, until the chard is wilted, about 3 minutes.

Stir in the tomato; cook, stirring as needed, until the tomato is softened, 2-3 minutes. Stir in the fusilli and cooking liquid; cook, stirring, 2 minutes. Serve, sprinkled with the cheese.
