Moroccan Couscous Salad
3/4 cup couscous
2 Tbsp. chopped flat leaf parsley
2 Tbsp. chopped cilantro
2 Tbsp. fresh lemon juice
2 tsp. olive oil
1/2 tsp. paprika
1/2 tsp. freshly ground black pepper
1/4 tsp. ground cumin
1/4 tsp. salt
1 carrot, finely diced
1/2 red bell pepper, seeded and diced
1/2 cup cooked corn kernels
2 Tbsp. chopped red onion

Cook the couscous according to package directions.

In a large bowl, combine the parsley, cilantro, lemon juice, oil, paprika, black pepper, cumin and salt. Add the couscous, carrot, bell pepper, corn and onion; toss to combine.

Makes 4 servings
