Lentil Burgers
1/2 cup lentils, rinsed and drained
2 tsp. olive oil
2 carrots, diced
1 onion, diced
1 tsp. salt
1/2 tsp. minced thyme
1/2 tsp. freshly ground black pepper
1/4 cup + 2 Tbsp. plain dried bread crumbs
4 whole-wheat hamburger buns

Cook the lentils according to package directions.

In a medium nonstick skillet, heat the oil. Add the carrots and onion; cook, stirring as needed, until golden, 10-12 minutes.

Spray the broiler rack with nonstick cooking spray; set aside. Preheat the broiler.

Add the lentils, salt, thyme and pepper and 1 cup water to the vegetables; cook, covered, stirring as needed, until the liquid is absorbed, about 20 minutes. Stir in the bread crumbs. Form the mixture into 4 burgers. Broil until golden, 7-8 minutes on each side.
Serve on the buns.
