Walla Walla Relish
3 cups sliced Walla Walla or other sweet onion (1/4 inch)
(1 lb.)
Olive oil flavored vegetable cooking spray
1 cup diced seeded tomato
2 Tbsp. thinly sliced fresh basil |
1 1/2 Tbsp. chopped seeded jalapeno pepper
2 tsp. extra virgin olive oil
2 tsp. white wine vinegar
1/8 tsp. salt
1/8 tsp. pepper |
Arrange onion slices in a single layer on a jelly roll
pan coated with cooking spray. Bake at 400 degrees F. for 15 minutes. Turn
over the onion slices, and bake an additional 25 minutes or until tender
and lightly browned. Let cool.
Coarsely chop onion. Combine the chopped onion and
remaining ingredients in a bowl; stir well.
Let stand at room temperature 20 minutes before serving.
Servings: 6
Yield: 2 cups (serving size: 1/3 cup).
