Hoppin John Salsa

1 can (15 oz.) black-eyed peas, drained, rinsed
1/2 cup Chopped carrots
1/2 cup Chopped celery
1/4 cup Chopped red onion
2 Tbsp. Chopped cilantro
1/4 cup Red wine vinegar
1 Tbsp. Vegetable oil
1 tsp. Sugar
Salt
Black pepper

Combine first five ingredients in a medium bowl. In small bowl, combine remaining ingredients. Pour over vegetable mixture in medium bowl and combine.
