Cranberry Salsa
12 oz Bag cranberries
3/4 cup Sugar
1 tsp. minced Garlic
1 jalapeno chili, seeded and minced
1/3 c Cilantro, chopped
3 Scallions, minced
1/4 cup Lime juice
1 dash Hot sauce
Salt and pepper
Pick through the cranberries, removing any stems, wash thoroughly. Bring 2 cups water and sugar to a boil. Reduce heat, add cranberries, and simmer for 2-3 minutes, or until cooked but still firm. Do not overcook; the cranberries should keep their shape. Drain in a colander. Rinse under cold water and drain thoroughly. Place in a medium bowl, add remaining ingredients and chill.
