Mango Salsa
1 Large Mango
1/2 Large Papaya
1/2 Medium Red Bell Pepper, Diced
1 Small Jalapeno, Diced
2 Tbsp. Chopped Fresh Cilantro |
1 Tbsp. Chopped Fresh Mint
1 Tbsp. Ground Cumin
2 Tbsp. Extra Virgin Olive Oil
3 Tsp. Fresh Lime Juice |
Peel mango and papaya...then de-seed. Dice both fruits
into small cubes.
In a large bowl, combine the mango and papaya cubes with
the red pepper, onion, jalapeno, cilantro, and the mint. Season with
the cumin, olive oil, and the fresh lemon juice.
Use pumpkin or fall squash in place of the mango and papaya.
