Carrot Salad
1 large carrot, peeled, cut into matchstick
size pieces or shredded
1/2 cup water
1 tsp. vinegar
1 tsp. sugar
A pinch of salt

Combine all the ingredients in a small bowl and stir to combine.
Allow to marinate for at least 15 minutes, or as much 24 hours. Drain and discard the liquid before serving. Makes about 1/2 cup to serve 4 to 6.
