Sesame Chicken Salad
2 Tbsp. sesame seeds
1/2 cup slivered almonds, finely chopped
2 cup shredded red cabbage
1 small carrot, shredded
4 scallions, chopped
1/2 lb. cooked skinless chicken breast, diced |
Dressing:
3 Tbs. red wine vinegar
3 Tbsp. sugar
salt and pepper to taste
1 tsp. sesame oil
1/4 C. safflower oil
1/4 C. low fat sour cream
1 tsp. ground cumin |
Toss the salad ingredients together, set aside in a covered
glass bowl.
Combine the dressing ingredients and chill for about an
hour before adding to the salad. Toss salad and dressing to combine, keep
refrigerated until ready to serve. Great on a spinach salad. Add some oranges
or mango to give a little extra zest.
