Carrot and Raisin Salad
1/2 cup seedless white raisins
1 cup water
1/2 cup mayonnaise
1/4 tsp. salt
1/8 tsp. white pepper
2 cups carrots, grated
1 cup crushed pineapple, drained

Combine raisins and water; bring to a boil. Remove from heat and drain; let cool. Combine mayonnaise with salt and pepper in a mixing bowl. Fold in raisins, grated carrots and crushed pineapple. Refrigerate for at least an hour. Serve cool on lettuce leaves and garnished with pineapple chunks if you like.
