Toss apples with 1 Tbsp. only of the orange juice and 1 Tbsp. lemon juice and mix well to preserve color. Add celery, dates and raisins.
Mix together yogurt, honey and remaining orange juice to make a smooth dressing. Pour over fruit mixture and stir until evenly blended.
Cover and chill 30 minutes before serving to give flavors a chance to mingle. Toss again before serving. Use a slotted spoon to serve.
