Tomato Salad with Mint and Spring Onions
4 firm red tomatoes
6 Spring Onions (scallions)
1/2 cup fresh mint leaves
2 Tbsp. lemon juice |
1/2 tsp. salt or to taste
2 tsp. sugar
1/2 tsp. chili powder, optional |
Peel tomatoes and cut into thin wedges. Finely slice
spring onions and chop mint leaves.
Mix other stuff until sugar is dissolved, combine and
mix lightly. Cover and chill.
