Mango Barbecued Chicken with Rice Pilaf
8 boneless chicken breasts
1/2 cup mangoes, peeled, seeded and chopped
3 tbsp. cider vinegar |
2 tbsp. dark brown sugar
1 clove garlic, minced
1/4 cup catsup |
Combine all ingredients except chicken breasts in a blender
and blend until smooth. Brush sauce on chicken breasts and grill
over medium high charcoal or gas grill. Baste with sauce until chicken
is done.

Wild Rice Pilaf
6 oz. wild rice, uncooked
1 tbsp. lemon juice
1 1/2 cups chicken broth
1/2 cup celery
1/4 cup green onions |
1/2 tsp. thyme
2 tbsp. parsley
salt and pepper to taste
2 tbsp. oil |
Cook rice in chicken broth until all broth is absorbed,
about 45 minutes.
Meanwhile sauté celery and onion in oil.
Combine rice, celery, onion, lemon juice, thyme and parsley together. Toss
and serve.
