Portuguese Chicken and Rice
1 whole med. size chicken cut up into pieces
5 diced cloves of garlic (or to taste)
1/4 cup of olive oil
4 cups chicken stock
1 medium onion diced
3 med. size tomatoes
1 cup of uncooked rice (Spanish)
1 tsp. of salt
1/2 tsp. pepper
3 large bay leaves

In a large pot add olive oil, diced garlic, onions, salt and pepper. heat until warm and smell flavor of garlic (do not brown garlic).
Add chicken and stir it around in mixture (just until done a little on outside). Add chicken stock and tomatoes (should cover chicken completely if not use more stock).
Let simmer for approximately one hour (or until chicken is starting to falling off bone.

Remove chicken from pot and put into covered bowl. Drain as much of the oil and chicken fat off the top of remaining liquid (Should be approximately 2 cups of liquid left afterwards).
Add 1 cup of Rice and simmer until tender.

Serves approximately 4
