Curry Chicken Salad
6-8 chicken breasts cooked and diced
1/2 cup celery diced
1/2 cup slivered almonds
1 15 oz. can pineapple tidbits, drained
1/2 cup seedless green grapes
1/2 cup seedless red grapes
1 cup mayonnaise
1 tsp. curry powder
2 garlic cloves, minced
juice of 1 lime
1/4 cup chutney
1/2 tsp. ground ginger or 1 tsp. fresh grated ginger
1 tbsp. fresh parsley chopped

Combine chicken, almonds, pineapple, celery and grapes in a large bowl.

Combine mayonnaise, curry powder, chutney, garlic, lime juice, ginger, and fresh parsley and mix well. Pour dressing over chicken and toss well.

Refrigerate for several hours before serving.
