Marinated Pork
6 Tbsp. onions, pared, diced small
6 Tbsp. coriander, fresh, chopped
3 Tbsp. light brown sugar, firmly packed
1 tsp. black pepper, coarsely ground
4-1/2 tbsp. garlic, pared, minced |
1/4 tsp. red pepper sauce
9 Tbsp. lemon juice
6 oz. low sodium soy sauce
3 pork tenderloins, well trimmed, (12 oz. ea.) |
Combine all ingredients except pork; mix well.
Place pork in glass dish; pour marinade over. Cover; refrigerate
for 4 to 5 hours.
Place pork on wire rack in sheet pan; slow roast at 250°
F. for 1 to 1-1/2 hours or until pork reaches internal temperature of 150°
F. Pork also can be broiled or grilled.
Serves: 6.
