Dredge your chops in crumb mixture with sage or oregano (whichever you prefer). Set oven at 350 degrees F. Combine tomato sauce, orange juice, brown sugar and honey. Heat skillet with 1 tablespoon of oil. Brown your chops in the skillet. When browned on both sides, transfer to a large shallow baking pan or casserole (from oven to table). Pour sauce over chops and bake for one hour and 15 minutes at 350 degrees F. Serve directly from the baking dish or set a mound of rice in the center of a platter surrounded by chops. Serves four, or eight if you provide a few sides. |
