Heat oven to 325 degrees F.
Trim fat from pork roast. Cut pork lengthwise almost into halves; open flat with cut side up. Mash remaining ingredients into a paste. Rub 2 teaspoons
of the paste on inside of pork.
Place pork on rack in shallow roasting pan. Roast uncovered 1 hour for medium doneness (160 degrees F.). Cut into 1/4 inch slices. 6 servings |
