Polish Beef Roll-ups
2 lb. round steak
1 grated onion
1/4 cup butter melted
2 cup water
2 large Polish dill pickles quartered lengthwise |
3 pcs. bacon cut in half
1 cup bread crumbs
1 beaten egg
1 Tbsp. chopped parsley
Salt and pepper
2 Tbsp. Wondra flour |
Tenderize steak(s) by beating them until thin. Cut steak(s)
into thin pieces, about 4-1/2 by 2 inches. Sprinkle with salt and pepper.
Combine bread crumbs, egg, onion and melted butter, salt
and pepper. Spread one piece of bacon on one piece of meat, add 1 Tbsp.
of dressing on each piece of meat, place one pickle quarter on meat, roll
up and fasten with a skewer or a toothpick. Roll in flour and brown in
bacon drippings.
Add 2 cups of water, cover and simmer for 1 to 1-1/2 hours
until tender.
Remove meat; remove toothpicks. Add Wondra flour to drippings
to make a thick gravy.
Pour gravy over meat. Garnish with chopped parsley and
serve with mashed potatoes.
