Cook lean ground beef in frying pan until done. Drain; then add 3/4 cup water and instant chili mix. Cook over medium heat for five minutes. Pour ground beef mixture into crock pot and set on high. Add oil to frying pan. Add onion and garlic and sauté for 3 - 4 minutes. Add stew beef, cover and cook on medium heat until beef is medium rare. Pour stew beef mixture into crock pot. Add tomatoes, tomato sauce, dark beer, chili powder, cumin, paprika, onion salt, ground pepper and your choice of ground red peppers to crock pot and cook on medium/high for 4 to 5 hours, stirring occasionally. Add beans and cook for an additional 45 minutes. Mix mesa flour with 1/3 cup water and add to chili. Cook for 15 minutes more. Hollow out 1 large loaf round sourdough or brown bread. Make sure it is the dense type of bread. Reserve bread middle for serving with chili. Pour chili into bread bowl and serve immediately. |
