Impossible Broccoli Pie
2 pkgs. (10 oz. each) frozen chopped broccoli
3 cups shredded cheddar cheese (12 oz.)
2/3 cup chopped onion
1 1/3 cups milk |
3 eggs
3/4 cup buttermilk baking mix (like bisquick)
3/4 tsp. salt
1/4 tsp. pepper |
Preheat oven to 400° F. Grease pie plate, 10x1 1/2
inches.*
Rinse broccoli under cold water to thaw; drain thoroughly.
Mix broccoli, 2 cups of the cheese and the onion in the plate. Beat milk,
eggs, baking mix, salt and pepper until smooth, 15 seconds in blender on
high or 1 minute with a hand beater. Pour into plate. Bake until knife
inserted in center comes out clean, 25- 35 minutes. Top with remaining
cheese. Bake until cheese is melted. Let stand 5 minutes. Garnish with
tomato slices if desired.
6 servings Good served with fruit and maybe a little
tobasco..
*I like to make it in my 10" cast iron pan .Tastes real
yummy!
