Extra Easy Pepperoni Pizza
1 1/2 cups Bisquick® Original baking mix
1/4 cup very hot water
1 Tbsp. vegetable oil
1 can (8 oz.) pizza sauce
1 pkg. (3 1/2 oz.) sliced pepperoni
1 large bell pepper, thinly sliced into rings
1/2 cup sliced fresh mushrooms, if desired
1 1/2 cups shredded mozzarella cheese
1 Tbsp. chopped fresh basil
or 1/2 tsp. dried basil leaves

Mix baking mix, hot water and oil until dough forms; beat vigorously 20 strokes. Let stand 8 minutes. Move oven rack to lowest position. Heat oven to 450° F. Grease cookie sheet or 12 inch pizza pan.

Pat or press dough into 13 inch circle on cookie sheet, using hands dipped in baking mix; pinch edge, forming 1/2 inch edge. Or press in pizza pan. Spread pizza sauce over crust; top with pepperoni, bell pepper rings and mushrooms. Sprinkle with cheese and basil.
Bake 12 to 15 minutes or until crust is brown and cheese is melted.
