Posole
For the sauce you'll need:
1 - 8 oz. can of tomato sauce + one can of
water
about 2 tsp. salt
2 or 3 tsp. of oregano |
2 or 3 cloves of garlic, minced
2 or 3 large red Anaheim
chilies torn into small pieces. |
Put all of these ingredients into a small sauce pan and
bring to a boil. When the chilies get soft, cook for a minute or two longer.
Have your blender ready to puree this sauce, be careful this is hot to
the touch. Set aside until you have the rest of your ingredients assembled.

For the "Rest" of your ingredients you will need:
1 - 3 or 4 lb. fresh pork roast, cut into 1" cubes,
4 - 16 oz. cans of hominy, white or yellow |
sauce you've prepared earlier
1 head of lettuce, shredded
fresh lemons, sliced into wedges |
Place all these ingredients in a large pot and cook over
low to medium heat until the meat is done. To serve, place stew in bowls
and top with fresh shredded lettuce and fresh squeezed lemon juice.
