Mama's Mexican Enchiladas
Old El Paso Enchilada Sauce
(l0 oz. can - red or green)
Shredded Cheddar and/or Monterey Jack Cheese |
Chopped Onion, large
Corn Tortillas (About six for two people.)
Eggs
Olive oil or cooking spray |
Turn oven on to about 200° F.- 225° F. degrees. Place enchilada sauce in a pan over low heat. Heat until sauce is hot. Dip tortillas (one at a time) into sauce, take out and place on serving plate. Add chopped onion and shredded cheese to taste. When you have as many stacks of tortillas, onion and cheese as you want, place serving plates in oven to melt cheese while you fry the eggs (in oil or spray) to put on top of each stack. If there is any sauce left, pour it over the eggs.
Serve with Refried Beans (add a little of the chopped onion and shredded cheese on top and Spanish Rice.
