Scalloped Potatoes
2 pounds potatoes, thinly sliced
salt and pepper
1 large onion, thinly sliced
4 tablespoons all-purpose flour
2 cups cheddar cheese, shredded
8 tablespoons butter
1 cup milk

Preheat oven to 300° F. In a buttered 3 quart baking dish, alternate 4 layers of potatoes, seasoned with salt and pepper, with for layers of onion. Sprinkle each onion layer with 1 tablespoon flour and 1/2 cup cheese, and dot with 2 tablespoon butter, cut into small pieces. Add just enough milk to cover the ingredients. Cover with aluminum foil and bake until bubbly (50 minutes). Raise oven temperature to 350 degrees F. Uncover potatoes and continue baking until the potatoes are tender and the top is lightly browned (30 to 40 minutes)
