Oatmeal Raisin Applesauce Cookies
1 cup whole wheat pastry flour, sifted
1/2 tsp. baking soda
1 1/2 cups rolled oats
2 egg whites, lightly beaten
1/4 tsp. cinnamon, nutmeg |
1/2 cup brown sugar
1/3 cup applesauce
1/2 cup nonfat milk
1 tsp. vanilla extract
1 cup raisins |
Preheat oven to 375° F. Sift together flour, baking
soda, and cinnamon. Stir in the oats. Combine egg whites, brown sugar,
applesauce, milk, vanilla and raisins, and add to flour mixture. Mix well.
Drop batter a teaspoon at a time onto a non-stick cookie sheet.
Bake 12-15 minutes.
Yield: 3 dozen
