Grilled Spicy Lamb Burgers
1 pound ground lamb
2 Tbsp. chopped fresh mint leaves
2 Tbsp.chopped fresh cilantro
2 Tbsp. chopped fresh oregano
1 Tbsp. garlic, chopped
1 tsp. sherry
1 tsp. white wine vinegar
1 tsp. molasses |
1 tsp. cumin
1/4 tsp. ground allspice
1/2 tsp. red pepper flakes
1/2 tsp. salt
1/2 tsp. ground black pepper
4 pita breads
4 oz. feta cheese |
Preheat charcoal or gas grill to medium temperature, and
lightly oil grate. In a large bowl combine ground lamb, mint, cilantro,
oregano and garlic. Add sherry, vinegar and molasses. Season with cumin,
allspice, red pepper flakes, salt and black pepper. Mix well and shape
into 4 patties. Grill about 5 minutes on each side. Heat the pita pocket
briefly on the grill and it will open up. Serve burgers inside pita rounds
with 1/4 of the crumbled feta on each.
