SURE-BET SANDWICHES
3/4 c. sherbet
1 (6 oz.) frozen juice can, (empty and clean)
16 butter flavored cookies, or other small round cookies

Spoon sherbet into can. Cover open end of can with foil. Freeze 2 hours. Open both ends of can. Force sherbet out of can. Cut into 8 slices 1/8 inch thick. Put sherbet between cookies to make a sandwich. Serve at once or refreeze. 
Makes 8.
