Lokshen Kugel (Noodle Pudding)
(6 servings)
2 Eggs
1 Tbsp. Sugar
1/4 tsp. Ground Nutmeg
2 1/2 C. Cooked Broad Noodles |
1 Tbsp. Vegetable Oil
1 C. Unsweetened Apple Juice
1/2 C. Raisins, dark or golden
1/4 C. Walnuts or Pecans, chopped |
Beat the eggs and sugar until fluffy. Add the remaining
ingredients, except the nuts. Pour into a well oiled 2 quart casserole
dish or an 8 inch baking pan. Sprinkle on the nuts.
Bake in a 350° F. oven for 40 to 50 minutes, or until
browned.
