Pasta Campagnola Italia
1 lb. Penne pasta
3 Tbsp. Olive Oil
2 Tbsp. Butter
1/2 Onion sliced very thin
2 Zucchini chopped
5 Plum Tomatoes chopped
1 Small potato peeled and diced small
3/4 lb. Mushrooms sliced
1/2 cup Chicken Stock
2 Tbsp. Fresh Basil chopped
Salt and Pepper to taste
1/2 cup Parmesan Cheese

Cook pasta according to package directions. Mean while, heat oil and butter in frying pan. Sauté onions until slightly brown (don't burn), add zucchini, potato, and chopped tomatoes. Cook for 3 or 4 minutes over medium heat. Add mushrooms, chicken stock, basil, salt and pepper, cook about twenty minutes. Pasta should be cooked by now. Drain pasta, toss with veggie mixture, sprinkle with parmesan cheese.
