Creamed Spinach
2 lb. fresh baby spinach, washed
1 tsp. canola oil
1 shallot, finely chopped
3 oz. reduced fat cream cheese
1/4 tsp. salt
1/8 tsp. freshly ground nutmeg
freshly ground pepper

Steam spinach until wilted and tender, about 4 to 5 minutes. (Chop coarsely if large leaf spinach is used.). In medium saucepan, heat oil. Cook shallot briefly. Add cream cheese and seasonings; stir until melted and mixed well. Add spinach and mix well.
Serves 6
