Herbed Oven Potatoes
1 1/2 lb. small boiling potatoes, scrubbed
2 tsp. canola oil
1 Tbsp. minced fresh herbs (thyme, rosemary, oregano, sage or parsley)
2 cloves garlic, finely minced
1/2 tsp. salt
freshly ground pepper

Cook potatoes in boiling water to cover until tender, about 20 to 25 minutes. Drain. Cut in half or quarters, as desired. Toss with remaining ingredients in a large bowl. Turn into a shallow baking dish, just large enough to hold potatoes in a crowded layer. Bake in 450 degrees F. oven until lightly browned on edges, about 15 to 20 minutes.
