Oven Roasted Crusted Salmon
12 oz. salmon fillet with skin on one side
1/2 oz. (6 pieces) dried tomato
3 Tbsp. water, boiling
2 cloves garlic, finely minced
2 oz. (1 cup) fresh bread crumbs, finely ground
1 Tbsp. Dijon style mustard
1/2 tsp. salt
freshly ground pepper

Preheat oven to 450° F. Preheat oven grill pan at least 15 minutes. Remove any bones from salmon. Hydrate dried tomato in boiling water. Drain any free hydrating liquid into small bowl. Chop tomato pieces finely and add to bowl. Add garlic and bread crumbs and mix well. Spread mustard evenly on non skin side of salmon. Press crumb mixture on top, covering salmon surface. Season with salt and pepper. Carefully place salmon on preheated grill. Cook in preheated oven about 10 minutes per inch of thickness of fish. Salmon should be slightly raw in center; it will continue cooking after removal from oven.
