Scallion Rice
5 scallions, trimmed, chopped, about 1/2 cup
2 1/4 cups water or vegetable stock
1 cup brown long grain rice or white rice
1 tsp. salt (less if stock is salted)

In large, heavy saucepan, stir together scallions, water, rice and salt. Bring to a boil, reduce heat to low simmer, cover and cook 45 minutes (only 20 if using white rice.) Remove from heat, leaving cover on, and let stand 10 minutes before serving. Serves 6
