Celery and Mushroom Savini
4-5 ribs celery, cleaned and sliced thin as possible
1/8 pound fresh white mushrooms, sliced thin
1/4 cup thinly shaved Percorino Cheese
3/8 cup good olive oil
Juice of 1/2 lemon
Salt and freshly ground black pepper to taste

Toss all together and marinate 1 hour before serving.
