Bean Soup (Fasolatha)
1 pound navy or black-eyed beans
1 large onion, chopped
2 carrots, chopped
2 stalks celery, chopped
chopped parsley
salt and pepper to taste
1/2 cup oil
1 can tomato sauce
4 cups water, more as needed

Heat oil in pan, add the vegetables and simmer for about 10 minutes. Add beans, tomato sauce and water. Cook slowly until beans are done, about 2 1/2 - 3 hours.
Serves 6 - 8.
