Bean Soup (Fasolatha)
1 pound navy or black-eyed beans
1 large onion, chopped
2 carrots, chopped
2 stalks celery, chopped
chopped parsley |
salt and pepper to taste
1/2 cup oil
1 can tomato sauce
4 cups water, more as needed |
Heat oil in pan, add the vegetables and simmer for about
10 minutes. Add beans, tomato sauce and water. Cook slowly until beans
are done, about 2 1/2 - 3 hours.
Serves 6 - 8.
