Vegetable Rice
1/2 cup onion, chopped
3 Tbsp. butter
2 cups cooked rice
1 tsp. salt
1/2 cup celery, chopped |
1/2 cup parsley
2 carrots, grated
1-4 oz can chopped mushrooms, undrained |
Sauté onion and celery in butter until tender.
Add remaining ingredients and mix well. Pour into a greased casserole dish
and bake covered in a 300 degree F. oven, for 1 hour.
