Wonderful Red Beans
One package (20 oz.) dried red beans prepared according to directions
One pound polish kielbasa
One medium onion, chopped
One bell pepper, chopped
1 Tbsp. chopped garlic
2 Tbsp. chopped parsley
1/2 Tbsp. oregano
1/2 Tbsp. basil
Water (to desired consistency)

Slice the sausage into bite size pieces. Brown in a large skillet, then remove from pan, leaving drippings. Add onion, pepper, and garlic and sauté until soft. Add parsley, oregano and basil and sauté one minute. Add prepared or canned beans and return sausage to pan. Simmer for approximately 30 minutes, stirring occasionally to prevent sticking.
Serves 4 - 6.
