Curried Rice Salad
2 cups chilled, cooked rice
1 medium sized green pepper, shredded
2 Tbsp. drained pimientos, cut in strips
2 Tbsp. raisins
2 Tbsp. chopped parsley
2 Tbsp. chopped green onion
unsalted peanuts
Dressing:
1/2 cup olive oil
1/3 cup wine vinegar
1 Tbsp. lemon juice
1 clove garlic, minced or mashed
1 Tbsp. sugar
1/2 teaspoon of curry

Mix cooked rice, green pepper, pimientos, raisins, parsley, green onion and peanuts together. Put in fridge while you mix the dressing.
Mix dressing ingredients together pour over the rice mixture. Mix thoroughly. Put back in fridge until ready to serve.
