Brown Rice Salad
1/2 cup uncooked brown rice
1-1/2 cups chicken broth
1 cup finely chopped apple
1/3 cup raisins
1/4 cup finely chopped onion
1/4 cup lemon juice
2 tablespoons chopped fresh parsley
1 teaspoon grated lemon peel
2 tablespoons frozen (thawed) apple
juice concentrate
1/2 teaspoon pepper
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg

Cook rice as directed on package except substitute broth for the water and omit salt. Toss rice and remaining ingredients in glass or plastic bowl. Cover and refrigerate about 2 hours or until chilled. 6 servings.
