Fried Fish
1 1/4 lb.. Fish fillet, (cod, haddock)
approx. 25 saltine crackers, crushed
2 eggs, beaten
1/4 cup milk
Cooking oil

Combine eggs and milk in a bowl. Put the cracker crumbs in another bowl. Cut the fish into serving size pieces, about 3 inches long. Dip the fish into the egg mixture, then the crackers. Fry in hot oil
about 1/8 inch deep until golden on that side, then flip and brown on the other side. Serve with sliced lemons if desired
