Egg Salad
Makes about 1 cup
4 hard cooked eggs, chopped
1 tablespoon prepared yellow mustard
1 tablespoon chopped green olives |
1 tablespoon finely chopped onion (optional)
Salt and pepper to taste
1/4 cup mayonnaise |
Mix together the first 5 ingredients. Gradually add the
mayonnaise until salad has the amount of moisture for your taste. Taste
for flavor. Serve as is or in sandwiches.
