Egg & Cottage Cheese Sandwiches
Servings: 8
8 Chopped hard cooked eggs
1 cup Low fat cottage cheese
1/4 cup Finely chopped celery
1/4 cup Finely chopped onion
1 Tbsp. Prepared mustard |
1/8 tsp. Pepper
2 Tbsp. Mayonnaise type salad dressing
2 tsp. Lemon juice
16 Slices bread
8 Small lettuce leaves |
Mix all ingredients except bread and lettuce leaves.
Portion egg mixture onto half of the bread slices. Spread to edges
of bread. Place lettuce on filling. Cover with remaining bread
slices. To serve, cut sandwiches as desired.
Serving size: 1 sandwich
