Raspberry Poppy seed Dressing
1 Tbsp. grated red onion
3/4 cup sugar
1 tsp. Dijon mustard
1 tsp. salt
1/3 cup raspberry vinegar
1 cup Safflower oil
1 1/2 tsp. poppy seeds

In glass bowl with a wire whisk, combine onion, sugar, Dijon mustard, salt, and raspberry vinegar. Whisk briskly until well blended. Slowly add the safflower oil and poppy seeds, whisking until mix is thoroughly blended.
This is wonderful served over a lightly wilted spinach salad with walnuts and tiny pieces of blanched broccoli and cauliflower.
