Fresh Vegetable Salad*
1 head red leaf lettuce (or mixed greens)
1 bunch of radishes, sliced
1 carrot, shredded
1/2 pint cherry tomatoes
1/2 red onion, sliced very thinly
1 small red bell pepper, diced
1 small yellow bell pepper, diced
1 small green bell pepper, diced
1 scallion, chopped
1/2 cup alfalfa spouts
1/4 cup creamy Tofu dressing
1 Tbsp. toasted pine nuts

Separate lettuce leaves and trim, rinsing well in cool water. Spin or pat dry, tear in bite size pieces and place in a large salad bowl. Add radishes, onion, carrot, bell pepper, green onions, tomato, and sprouts. Toss with dressing and garnish with pine nuts.

You can also top this with grilled steak or grilled chicken for a more filling summer salad. Servings: 6
