Tomato-Basil Salad with Balsamic Dressing
Salad:
4 medium tomatoes, sliced
2 Tbsp. chopped fresh basil or 2 tsp. dried, crumbled
Remaining Ingredients:
2 Tbsp. shredded fat-free mozzarella cheese
2 Tbsp. grated Parmesan Cheese |
Dressing:
2 Tbsp. balsamic vinegar
1 Tbsp. olive oil
1/2 tsp. sugar
1/4 tsp. pepper |
For salad, arrange tomato slices on a large, flat plate.
Sprinkle with basil. In a small bowl, whisk together dressing ingredients.
Pour over tomatoes. Sprinkle with mozzarella and Parmesan. Cover and refrigerate
until serving.
