Peanut Puffs

3/4 cups soft shortening
1/2 cup peanut butter
1/2 teaspoon salt
1/2 cup sifted confectioner's sugar
1 teaspoon vanilla
2-1/4 cups sifted flour
3/4 cup salted peanuts, finely chopped
sifted confectioner's sugar

Heat oven to 375° F. Cream shortening with peanut butter and salt until light and fluffy, gradually adding confectioner's sugar. Blend in vanilla then flour. Stir in peanuts; mix well. Shape into small balls. On ungreased cookie sheet, bake 12 minutes, or until golden brown. Roll immediately in confectioner's sugar.
Makes about 4 dozen.
